Gooseberry Meringue Cake


This cake is delicious and a great alternative to oatmeal in the morning.
You will need:

For the cake:
140g ground oats
40g vanilla whey (I used scitec)
5 eggwhites
1 egg
2 Tbsp quark or greek yogurt
1-2 Tbsp erythritol /Xucker or other sweetner
1 pckg baking powder
1-2 handful of berries/ fruit of your choice

For the meringue:
2 eggwhites
Pinch of crean of tartar
Pinch of salt
3 Tbsp erythritol/Xucker of sweetner of your choice

Mix ingredients for the cake and pour the batter in a baking dish. Spread the berries on top and bake for 15 minutes at 200 degrees. Meanwhile prepare the meringue. Beat two eggwhites with cream of tartar and salt until stiff then add sweenter one tbsp at a time. Beat until sweetner has dissolved. 
Take the cake out of the oven and spread meringue mix on top. Reduce heat to 150 degrees and bake for 20 more minutes. After that turn the heat off and leave the cake in the oven without opening the oven door until cool. Enjoy and let me know if you liked it!
